This coffee is mostly processed as a natural by the farm

Once these sprouted I entrusted 4 of them to the care of Kraig Lee of Kona Farm direct who by now was growing plants for farmers of many of the other other varieties I had selected for Hula Daddy years ago

this batch was pulped cherries fermented in a sealed container Anaerobically (without oxygen) inoculate with Lactic acid producing microbes

The cherries are first sterilized and then undergo fermentation in cherries in a bio-reactor and are inoculated with microbes they have selected from their local environment
